Walleye Piccata

 

Walleye fillets      2

Flour                      1/2c

Salt                  to taste

Pepper            to taste

Chopped garlic    1T

Chopped parsley 1/3c

White wine            1/2c

Fish stock             1/2c

Capers                   1/4c

Olive oil                  5T

Butter                     5T  

Lemon juice          3T

Lemon(sliced)       1

 

1.Season fish with salt and pepper & dredge fillets in flour

2.Heat oil to medium  and cook fish until brown on each side(turn once)

3.Remove fish and set aside

4.Add garlic and cook until tender (1 min)

5.Add wine, stock & lemon juice.  Simmer until liquid is reduced in half (stirring constantly)

6.Add capers and return fish to pan.  Cook for apx 3 minutes

7.Place fillets on serving platter

8. Gradually whisk softened  butter into the sauce

9.Pour sauce over fish

10.Sprinkle with parsley and garnish with lemon slices
